Low-Potassium Lemon Herb Chicken (Kidney-Friendly)

This simple, flavorful chicken recipe is designed for patients with kidney disease who need to limit potassium and sodium. It’s easy to prepare, heart-healthy, and great for meal planning.

Ingredients (Serves 2–3)

  • 1 to 1½ lb skinless chicken breast or chicken thighs (boneless)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest (optional)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • ½ teaspoon black pepper

  • ¼ teaspoon paprika

  • Salt-free seasoning blend (optional)

  • Fresh parsley for garnish (optional)

⚠️ Avoid high-potassium marinades, tomato sauces, soy sauce, and potassium-based salt substitutes.


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a baking dish with a small amount of olive oil.

  3. In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, thyme, pepper, and paprika.

  4. Place chicken in the baking dish and brush both sides with the seasoning mixture.

  5. Cover loosely with foil and bake for 20–25 minutes (depending on thickness).

  6. Remove foil and bake another 5–10 minutes until fully cooked (internal temp 165°F).

  7. Garnish with fresh parsley and serve.
